My Million Pound Menu winners open their first restaurant in Liverpool

Pilgrim, the winners of BBC2’s My Million Pound Menu, will open their first restaurant on Liverpool’s Duke Street Market on the 15th May.

The menu will pay homage to the inspiration behind the ‘Pilgrim’ name – an annual pilgrimage to Santiago de Compostela in Galicia, Spain – by drawing on the French, Spanish and Portuguese dishes that are traditionally cooked along its route.

The team behind Pilgrim have promised to showcase the “diverse flavours and ingredients found along the many routes of the Camino, serving a flexitarian menu that showcases the highest quality local produce, all cooked over a live-fire hearth in our open kitchen.”

And, as there are more than a dozen routes of the Camino, we can’t help but feel living up to that promise is going to involve changing up the menu on a fairly regularly basis!

While keeping both your menu and the way you serve your customers fresh is always going to play a large part in running a successful restaurant in the 21st Century, there are other considerations.
