A recent survey of the food service industry shows that sustainable eating continues to drive change for both food producers and the owners and operators of restaurants, hotels, pubs, bars and casual dining establishments.
40% of respondents to the Nestlé-commissioned survey said they see sustainable eating not only playing an increasingly important role in the future of the hospitality sector but also that it will soon present one of the most significant and most exciting opportunities for everyone involved.
The research clearly shows sustainability will have a huge impact on the future of food service. It supported that claim by revealing that more than a third of respondents already feel sourcing alternative food sources are essential considerations.
Moreover, according to the report it appears the industry’s kitchens are already up and running. 85% of those interviewed said their kitchens were already becoming more sustainable and 72% said sustainability featured prominently in the way they train their new chefs.
However, there are concerns over training.
30% of those interviewed said the developing talent is still a major challenge and 41% said they thought that talent drive could be helped if certain chefs could be promoted more effectively to establish the types of “positive role models” that would to attract people towards a long-term career in food.
